Cocina china: Brotes de soja o soya rehogados


Ingredientes
250 g. de brotes de soja
2 cucharadas de aceite de maní o vegetal
2 cebolla de verdeo, cortadas en trozos de 2-3 cm., reservando por separado las
partes blanca y verde
2 rodajas finas de raíz fresca de jengibre, pelada
1/4 cucharadita de sal
1 cucharada de salsa de ostras
Preparación
Caliente el wok. Agregue el aceite y la parte blanca de las cebollas de verdeo y en
cuanto empiece a sisear, añada las rodajas de jengibre. Eche los brotes de soja en el
wok. A fuego vivo, rehóguelos y sacúdalos removiéndolos enérgicamente unos 2
minutos para que se hagan por igual. Espolvoree sal hacia el final del tiempo de
cocción; agregue las partes verdes de la cebolla.
Los brotes de soja tienen que quedar crujientes y soltar muy poca agua. Páselos a
una fuente caliente. Moje con la salsa de ostras mezclando ligeramente con un par
de palillos o un tenedor, y sirva.
